Why is my 5 year old schnauzer developing a black stipe down his back?

That sounds like a normal colour change. Schnauzers can and do change colour. Usually the stripe down the back is the wiry pepper-coloured hairs, but it sounds as though your Schnauzer's wiry top coat is turning darker. Unless it starts to fall out or he gets skin sores, all is normal.
