14 yr old female mini has BRIGHT/DARK YELLOW urine. for past week

She (LaCee) is completely blind and I do have her in a diaper 24/7. She only wets between the hours of 2-5 p.m....the rest of the time, including nights, she is dry. Her urine has turned BRIGHT Yellow and I do make sure she has plenty of water. I carry her outside every 2-3 hours and she will always pee outside. Any ideas why the urine is bright yellow? No change in food. She has been prone to UTI's but does not have one.
